Picked while very ripe, the Muscadelle is given skin contact for as long as possible before fermentation. As soon as fermentation commences, neutral grape spirit is added to retain the natural grape sugars. This is then followed by extended ageing in large format oak in a modified solera system, for an average age of 20 years. |
