Winemaking Note this sparkling is fresh, delicate and dry. After being gently hand-picked, it rests in stainless steel for five months before a secondary fermentation and 9 to 12 months on lees. It has a lovely pale pomegranate hue and is complex and highly textural with licorice and savory notes accompanied by roses, honey and herb-strewn cherry with hints of Christmas cake. The wine has beautiful fine acidity and well-balanced tannins to give additional depth.
